Not for Cabo Banana Bread

Who is going to Cabo San Lucas for spring break? Who is working out super hard to get an oh so skinny tummy?  NOT ME. I am getting a nice booty though that was once non-existent( WOO!) Yet it comes with a tummy too.. ( BOO!) I’ve been craving carbs  and I had some old bananas. WIn win, we get Banana Bread


Here’s What You’ll Need:

1 3/4 cups of all-purpose flour
3/4 cup of granulated sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
2 large eggs lightly beaten
1/2 cup unsalted butter, melted and cooled
2-3 over ripe bananas mashed well
1 tsp vanilla

Here’s What to do:

1.)Preheat oven to 350°
2.) prepare a 9x5x3 loaf pan with butter then flour
3.) In a medium mixing bowl combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Set aside.
4.) In a large bowl combine  eggs, butter, banana and vanilla.
5.) Gently pour dry ingredients into wet ingredients and fold until just combined.
6.) Sneak in chocolate chips
7.) Scrape batter into loaf pan and tap on counter to settle.
8.) Bake for  about 45-60 minutes or until you can insert a knife and have it come out clean.
If it looks like the top is starting to brown too much, and the knife still isn’t coming out clean,… cover loosely with foil and continue baking.

9.) Enjoy with a spread of butter or cream cheese and a large glass of milk and bask in the fact that you get to eat carbs while everyone else is only dreaming of it.
